A delicious chocolatey treat.
CHOCOLATE BANANA CAKE
250g x Bananas Chopped - Riper the better
200g x High Quality Dark Chocolate - Chopped
3 x Large Eggs - 2 separated, 1 whole
90g x Sunflower Oil
50g x Whole Milk
150g x Golden Caster Sugar
150g x Self Raising Flour
½ xTeaspoon bicarbonate of soda
4 x Tablespoons Cocoa Powder
Preheat oven to 140°C.
Place 2 egg whites in very clean mixing bowl then whisk until it turns stiff peaks. Once done, set aside.
Place bananas in mixing bowl and mash.
Add 1 whole egg and the 2 reserved egg yolks, oil and milk then mix.
Add sugar, flour, chopped chocolate, bicarbonate of soda and cocoa powder then mix again until everything is combined.
(I made mine using my @thermomixukandireland but you can do this by hand or with an handheld electric whisk too, just need extra elbow grease 💪🏽)
Add reserved whisked egg whites and gently fold in with spatula until completely incorporated.
Transfer to greased baking tin and top with a few pieces of chopped banana and chocolate shards.
Bake for 55 minutes (140°C) or until a skewer inserted in centre comes out clean.
