HOMEMADE GNOCCHI WITH TOMATO, BASIL & GARLIC SAUCE
1 x Medium Sweet Potato
1 x Large White Potato
320 x Self Raising Flour
1 x Egg
Butter to fry off gnocchi
3 x Tablespoons Olive Oil
2 x Cloves Garlic (roughy chopped)
10 x Baby Tomatoes (halved)
1 x Teaspoon Dry Basil
Salt & Pepper
TOMATO, BASIL & GARLIC SAUCE
Boil potatoes until soft
While potatoes are boiling pour the flour mixture onto the table with the salt and create a well in the middle
Mash the potato and add to the centre, along with one egg.
Combine the ingredients until you get a nice dry dough ball. (Add more flour if the mixture is sticky)
Cut the mixture into manageable chunks and roll them out into sausages. Cut along into gnocci sizes pieces.
Use a board or back of a fork to indent the dough with stripes. Repeat until all the gnocci is done.
Add olive oil, garlic and tomatoes to a pan and cook on a low heat.
Add dry basil and salt and pepper.
Simmer until cooked.
Boil gnocchi for 1-2 mins (until gnocchi floats). Then remove the gnocchi from the water and fry lightly in butter.
Combine the gnocchi and tomato sauce, and sprinkle with some parmesan.
