SWEETCORN CURRY (VEGAN)

Ingredients
- 1 x pack of EATWITHAMA Organic Curry Seasoning Mix

EATWITHAMA JERK SAUCE (to taste)
- 2 x tablespoons coconut oil
- 4 x cloves garlic, peeled and left whole
- 20g x ginger, peeled & finely chopped
- 1 x large potato, peeled and chopped (roughly 420g)
- 1 x small cauliflower, chopped in to bite size pieces
- 1 x white onion, roughly chopped
- 450ml x vegetable stock
- 2 x tablespoon coconut cream
- 20g x fresh coriander
- 300g x frozen sweet corn
- Pinch of salt (to taste)
Directions
Chop the onions, ginger and garlic and dice the potatoes
Add coconut oil to the pot, and fry dry seasoning
Then add ginger, garlic and onion
Once softened, add the potato, stock and sweetcorn to the pot
Allow that to cook for 10 minutes before adding coconut cream, cauliflower and coriander
Mix and put the lid on, leave to simmer for 6-8 mins
Serve with rice and top with corriander and the Jerk sauce for some heat and added flavour!
